Chen et al. (2017) examined protein composition of peanut crude OBs extracted by aqueous extraction and found that proteins adsorbed on surface of OBs were mainly lipoxygenase, peanut globulin, concomitant globulin, and allergic proteins; however, the mechanism of interaction between adsorbed proteins and OBs was not clear.
However, a high level of PLs in crude oil may result in oil-loss during neutralization and precipitate during transport or storage (Sengar, Kaushal, Sharma, & Kaur, 2014). Peanut oils extracted with traditional methods commonly contain a high level of PLs (Wei, Xu, Yu, Jia, Yang, Jia, et al., 2015) thus calls for degumming to reduce PLs content.
