1. Introduction. Sunflower oil is available as edible refined, and increasingly as edible unrefined, cold pressed, or virgin oil. Cold pressed oil contains minor components such as tocopherols, phytosterols, and pigments that are desirable in the oil, as well as those that are not desirable, including phospholipids and waxes.
In a cold press, the hulls are removed; the seeds are broken into slighter pieces and run through steel rollers or a piston-like cylinder to squeeze out the oil. The resultant oil is generally labeled as “extra-virgin” sunflower oil, but the process leaves much of the oil behind in the seeds.
